Sweet Potato Cupcakes with Maple Cream Cheese Icing

Is your mouth watering yet?  Let me tell you, these cupcakes are A.M.A.Z.I.N.G!  Once you make them you'll never go back to box mixes again.

                                    2 c. flour                                                        1 c. butter softened
                                    2 t baking powder                                          1 1/2 c. sugar
                                    1 t ground cinnamon                                     3 eggs
                                    1/2 t baking soda                                           2 c. mashed sweet potato
                                    1/4 t salt                                                         1/2 t vanilla

Maple Cream Cheese Icing
8 oz. cream cheese
1 c butter softened
5-6 cups confectioners sugar
1 t maple syrup

Preheat oven to 350 degrees.  Line 24 muffin cups and set aside. 

Peel, cut and boil sweet potatoes until soft then drain and mash.

In a medium bowl, mix flour, baking powder, cinnamon, baking soda and salt.  Set aside.

In large bowl beat butter with mixer until light and fluffy (about 30 seconds).  Added sugar and beat for 2 minutes.  Add in eggs one at a time, beating on low speed unitl well blended.  Add in sweet potatoes and vanilla until well blended.  Add in flour mixture until combined.

Divide mixture into 24 lined muffin cups and bake approximately 20 minutes.  Remove immediately and cool on wire rack.

While muffins are cooking, prepare frosting.


Beat butter and cream cheese until light and fluffy.  Add in maple syrup until well blended.  Add in sugar 1/2 cup at a time and beat until well blended.   

When muffins are completely cooled spoon icing into a plastic bag, cut corner and pipe icing onto muffins.
