I grabbed the leftover BBQ chicken, cilantro and red onion and chopped them all up as fillers for the quesadillas.
I added Mexican cheese and lime juice before I topped them.
Then cooked them until they were golden brown.
(Makes enough for 2 quesadillas)
4 flour tortillas
1 tablespoon butter (or butter substitute)
1 cup grilled BBQ chicken, chopped
1/4 cup fresh cilantro, diced
1/4 cup red onion, diced
1/2 cup Mexican cheese
Heat skillet on medium heat
Butter tortillas and lay butter side down on preheated skillet. Add cheese, chicken, onion, cilantro and a splash of lime juice. Top with another tortilla, butter side up.
Cook until crispy and golden brown. Serve with sour cream or other favorite topping.
