Garlic Shrimp with tomatoes, coconut milk and cilantro...
I'm always looking for new recipes to try and one of my favorite places to look for great recipes is Skinny Taste. If you follow me on Pinterest you will see that I pin a lot of Gina's recipes. Not only are most of them delicious, but they are also pretty easy and quick to prepare. Just recently I pinned her Garlic shrimp in coconut milk, tomatoes and cilantro and it was so good.
I used an orange pepper instead of red and coconut oil instead of extra virgin olive oil. Coconut oil is definitely more expensive ($9.00 for the jar at my local grocery store) but I use it in most recipes that call for oil.
The recipe was super quick and easy and would even be manageable on a week night after work.
Once everything is chopped up, you just sauté the pepper for a few minutes then add the cilantro, onions, garlic and red pepper flakes.
Then you add the can of chopped tomatoes and coconut milk and simmer for about 10 minutes.
