Fresh Margherita Pizza...

Many families have pizza nights and my family is no exception.  I used to buy whatever pizza was on sale and that's what we would eat.   Buying store bought pizza is definitely cheaper than ordering out, but I was tired of wasting money on mediocre pizza.  That's when I started making my own and now that's all the pizza we eat.   This pizza is so simple and I promise it's worth the extra couple minutes it takes to make.

                                     1 lb Pizza Dough                                                          2 T Oregano
                                     3-4 Tomatoes                                                               2 t Minced garlic
                                     8 oz. Fresh Mozzarella cheese-sliced                     Salt and Pepper
                                     2 T Olive oil

Preheat Oven to 450 degrees

On a floured surface knead dough and flatten to fit in a greased 9x12 cookie sheet

Bake dough about 10 mins.  

While the dough is baking boil enough water to cover the tomatoes.  Once water is boiling pour over tomatoes and let sit for 1 minute.  

Peel skin off tomatoes and dice 

Add in the oil, garlic, oregano, salt and pepper

***If your tomatoes are really watery drain the excess liquid before adding other ingredients***

Remove baked dough from oven and top with tomato mixture

Then add the sliced mozzarella

Bake an additional 5-8 minutes until the cheese is melted and the crust is golden brown.

In the summertime I top the pizza with fresh basil from the garden.  It's so good!
