Cranberry Walnut Chicken Salad....

This chicken salad was inspired by one of my favorite local restaurants, J cafe located in downtown Westminster, MD.  They have the best homemade chicken salad and cupcakes.  Even though I love their food, it was getting pricey buying lunch from them so often.  That's when I decided to try my hand at replicating their chicken salad.

1 lb chicken breast shredded
4-5 green onions diced
1 C dried cranberries
1 C chopped walnuts toasted
1/4 C chopped celery (I do not like celery, so I leave it out)

1/2 C mayonnaise
1/2  C plain Greek yogurt
2 T pomegranate red wine vinegar
1/2 t celery seed
salt and pepper to taste

Mix shredded chicken, green onions, celery, cranberries and toasted walnuts in a large bowl and set aside.  In a medium size bowl mix dressing ingredients until combined.  Pour dressing over chicken mixture and chill for at least an hour before serving.

You can certainly eat this on a roll, but I love it on a bed of mixed greens.
